This is a recipe that I used today and it made an amazing banana bread. I am a chocolate addict and I have always loved blueberry banana bread, my boyfriends mom makes it and it is just unreal. This then gave us the idea to combine the two and what was the result was a chocolate chunk, blueberry, banana bread. Again, this is gluten free because I am unable to eat gluten for health reasons so we used gluten-free flour but this would be just as great with normal all-purpose flour.
Ingredients
4 ripe bananas, mashed
1/3 cup melted butter (or margarine)
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 – 1 1/2 cups Decadent Chocolate Chunks (chocolate chips will work too)
1 cup of blueberries
1 1/2 cups of Robin hood Gluten-free flour (or all-purpose flour)
Prep Time: 10 minutes Cook Time: 1 hour
Directions
1. Preheat oven to 350°F (175°c)
2. Mix together butter and mashed bananas
3. Then mix in all other wet ingredients plus the sugar (sugar, beaten egg, and vanilla)
4. Continue with sprinkling a teaspoon of baking soda into the mix
5. Next add in the pinch of salt.
6. Add in the flour in batches, about 1/3 a cup at a time
7. Lastly fold in chocolate chunks and blueberries
8. Bake for about an hour
Let it sit for 10 minutes, serve, and enjoy! 🙂
